What's Cookin!

When the weather starts to get a little cooler, I start craving home cookin! I love trying new recipes, especially now that I have a much bigger kitchen!! And I've been on the hunt for the perfect baked artichoke with the tastiest dipping sauce just like the one at 3A's in Hoboken (again, thanks Heather!).

Artichoke_1 At Simply Recipes Elise talks about how to eat an artichoke which I actually just learned how to do from my friend Heather when I moved to NJ a couple years ago! Elise also has a link to the California Artichoke Advisory Board (WHO KNEW?!!) that has a few good looking recipes on it.

And Kalyn also has some great info about artichokes including her mom's recipe for a dipping sauce that looks pretty good! She also provides a link to the Gourmet Sleuth who has a ton of recipes for artichokes, including one for a stuffed artichoke that looks awesome!

<<This just in! I figured out that 3A's uses Garlic Ailoi and I found recipes for the sauce at Gourmet Sleuth and Pizzaware! It looks very good but VERY time consuming! There must be an easier way.>>

On Sunday I hosted a cookout for my neighbors, and one of the things I made was an artichoke dip that I have been craving! One of my old friends  (she shunt me on New Years Eve a few years ago. We're no longer friends. She's a biotch.) gave this recipe to me and I make it whenever I have the excuse! It's so easy it's criminal- I suggest you try it out as soon as possible!

The Biotch's Artichoke Dip Squares Grocery_1

1 C mozzarella cheese
1 C mayonnaise
1 C parmesan cheese (grated)
1 can artichokes (un-marinated)
1-2 cloves garlic, minced

Mix everything together, including the water from the canned artichokes. Then scoop the dip onto rye party bread squares and bake at 350 until it starts to get golden brown on top (usually ~10-15 minutes).  OR, you can bake it in a bread bowl (rye or sourdough work best) until golden brown on top.  Then you just dip with crackers.  Both ways are great.
